My Grandmother used to fix omelets for our family every Sunday morning before church. She called them kitchen sink omelets and when I asked her why she called them that, she said she could put everything in them except the kitchen sink (everything meant any of the weeks leftovers in the fridge) and they'd still come out warm and wonderful. I thought she ought to call them "Everything but the Kitchen Sink Omelets "or "Leftover Omelets", but she told me I had a thing or two to learn about marketing - which I now can appreciate. So, in honor of my Grandmother, Marie Ward, here are a few of her favorite recipes.

 The Mashed Potato With three boys and a husky and hungry husband, I always make plenty of mashed potatoes. Here's how I keep the fridge empty and delight the boys at the same time.
 The BLT Sandwiches are easy. Right? One of the favorite sandwiches around our house is the BLT, which is just as easy in an omelet. Try it for your family and they'll promise you anything for more. You're on your own for collecting on that promise, however.
 The Juicy Fruit This is one of my personal favorites and the summer harvest of blackberries down by the creek is my favorite source for the fixings. My boys like it so much they're always willing to do the picking for me. In addition to mint, you can top it with sweetened sour cream, fruit yogurt or even sherbet.
 The Chip & Dip There's usually always some leftover bags of tortilla chips at our house and here's a great way of using those last few morsels in every bag. Rather than throw them away, try this recipe and you'll be amazed at your family's reaction. You don't have to tell them they're leftovers.
 The Bruschetta My family loves Italian cuisine and garlic bread is always a favorite part of the meal. Although my Grandmother wasn't Italian, she taught me that garlic bread with toppings is known as Bruschetta. All you need to do is add some tomatoes and seasonings to those few leftover pieces and your family will think you're a genius.
 The Caesar Caesar Salad is a big favorite at our house, yet there's usually always a bit left after each meal. Why not recycle some of last night's dinner into this crunchy omelet and spiff it up with some tomatoes and seasonings?

4 cups mashed potatoes

1/2 cup chopped green onion

4 teaspoons bacon bits

4 slices bacon, cooked

 

Mix potatoes with onion and bacon bits. Microwave on high until warm (about 2-3 minutes). Prepare Easy Speedy Omelet per basic instructions. Fill each omelet with about 1 cup filling. Close. Garnish with bacon slice or serve with any potato topper you choose, such as sour cream or grated cheese.

Nutritional Information

247 calories, 21 grams protein, 5 grams carbohydrate, 15 grams total fat, 439 milligrams cholesterol, 641 milligrams sodium.

4 medium tomatoes, thinly sliced

3 cups shredded lettuce

8 bacon slices, cooked

 

Prepare Easy Speedy Omelet per instructions. Do not fold. Flip out of pan, but leave flat on plate. For each omelet, arrange 1 sliced tomato on bottom, cover with 3/4 cup lettuce and garnish with 2 slices bacon

Nutrition Information (total for four omelets):

1 cup fresh blackberries or frozen, thawed

1 cup fresh raspberries or frozen, thawed

1 cup fresh blueberries or frozen, thawed

Mint sprigs

 

Combine berries in bowl. Prepare Easy Speedy Omelet per basic instructions. Fill each omelet with about 3/4 cup filling. Close. Garnish with mint sprigs and/or powdered sugar, if desired.

4 cups tortilla chips (or other chips), broken up

1/2 cup grated cheddar cheese

1 cup chunky salsa

 

Sprinkle chips with cheese and microwave on high for 1 minute to warm chips and melt cheese. Prepare Easy Speedy Omelet per instructions. Fill each omelet with 1 cup chip mixture and close. Garnish with 1/4 cup salsa.

430 calories, 20 grams protein, 31 grams carbohydrate, 26 grams total fat, 444 milligrams cholesterol, 979 milligrams sodium.

1/4 cup olive oil

1 tablespoon minced fresh garlic

1/2 teaspoon coarse salt

1/4 teaspoon ground black pepper

1/2 cup fresh basil, julienned

2 medium tomatoes, sliced

2 cups grated garlic bread, cubed or garlic croutons

 

Combine olive oil, garlic, salt, pepper and basil. Toss with tomatoes and bread Prepare Easy Speedy Omelet per instructions. Do not fold. Flop out of pan, but leave flat on plate. Cover with about 3/4 cup tomato/bread mixture.

4 cups romaine lettuce, torn into bite-sized pieces

1/2 cup prepared Caesar Salad dressing

1 cup grated Parmesan cheese

1 cup croutons

1/4 cup grated Parmesan cheese (for garnish)

 

Toss lettuce with dressing and 1 cup grated Parmesan. Prepare Easy Speed Omelet per instructions. Fill each with about 1 cup lettuce mixture and close. Garnish each with 1/4 cup croutons and 1 tablespoon cheese.
